It’s always seemed like an oxymoron: crustless quiche. Isn’t that basically just an omelet or a fritatta? I definitely don’t mean to knock crustless quicheI think it’s a great way to go when you’re trying to keep to a gluten-free diet. But I also really like the presentation of a quiche crust, so I came up with a couple recipes that let me have it both ways.

Option #1: Crispy Sliced Potatoes

Thinly-sliced potatoes make a delicious, crispy gluten-free alternative to a traditional quiche crust.

Thin slices of potatoes are layered into small ramekins to make adorable mini quiches. Not only do the potato slices look gorgeous, I love how the edges sticking above the egg filling get crispy.

Option #2: An Acorn Squash

Fill half of an acorn squash with your favorite quiche recipe for a hearty gluten-free alternative to a traditional crust.

No need to serve anything with these individually-sized quiches aside from a cup of coffee—the acorn squash makes for a seriously filling, healthy breakfast.
