When I’m out to brunch, the allure of the Dutch baby calls. I’m a sucker for the dish’s delicious, puffy showmanship. What I don’t always enjoy is super-sweet breakfast food; filling up on a sweet meal on top of the necessary mimosa leaves me hungry (or hangry!) an hour later.

This is why brunching at home yields a big advantage: You can make your oven pancake however you like and share it with your friends. I recently made my first savory Dutch baby, and I’ll never go back to sweet. The possibilities are endless! Here’s a few tips to take your Dutch baby savory.

First, you want to start with a Dutch baby base. Simply alter a sweet recipe by taking out the sugar in the batter and add enough salt to give it some flavor. Your savory options are two-fold: Filling and toppings.

Flavoring your filling is a great way to add extra flavor to take your pancake to the extreme.

  • Fresh or Dried Herbs
  • Cheese
  • Spices

Use your toppings to complement the filling.

  • Meat
  • Cheese
  • Veggies
  • Fresh Herbs

5 flavor ideas to get you started:

 

1) Diner Breakfast:

  • Filling – Standard savory batter
  • Topping – Bacon and eggs your way.  Hash browns optional.

2) Ratatouille:

  • Filling – Oregano and Parmesan cheese
  • Topping – Roasted eggplant, tomatoes, and zucchini. Shaved Parmesan cheese.

3)  Italian:

  • Filling – Fresh parsley and Parmesan cheese
  • Topping – Cooked Italian sausage, marinara, and mozzarella.  Pop under the broiler to get the cheese all melty.

4)  Caprese

  • Filling – Pesto (just a bit!)
  • Topping – Tomato, freshly torn basil, and mozzarella

5) Ultimate Gourmet (my special recipe in the photo above)

  • Filling – Standard savory batter
  • Topping – Over easy egg, sliced ham, ricotta cheese, and shaved Parmesan
