Full-fat cheese may be as healthy as lowfat cheese. That’s the tantalizing conclusion of a new study from Denmark.

According to The New York Times, there were three groups in the study: one group ate full-fat cheese, a second ate lowfat cheese, and a third was the control group.
After 12 weeks, researchers tested the blood chemistry of each group and found no difference in a number of critical areas — including bad cholesterol (LDL), triglyceride, fasting glucose, and insulin levels — between those who ate full-fat cheese, lowfat cheese, and a control group. There was even a slight increase in good cholesterol (HDL) for the people who ate full-fat cheese.
The study, which was paid for by Danish dairy industry organizations, was published in the American Journal of Clinical Nutrition.
The NYT article quotes the lead author of the study, Farinaz Raziani: ““It is reasonable to include regular-fat cheese as part of a healthy diet.”
No doubt more research will be needed. But in the meantime, we’ll be revisiting some of our favorite cheesy comfort foods.
