It’s tempting to gorge on the fresh fruits of summer, but you’re gonna want to make those juicy flavors last throughout the year by preserving berries, plums, rhubarb and more. Yes, that process of “putting up” can seem daunting if you’ve never tackled it before. But it’s not as complicated as all that. If you don’t want to deal with sterilizing and sealing jars in a water bath, it’s perfectly acceptable to store jam in the fridge for a few weeks or in the freezer for up to a year. Here are some of our top-rated quick and easy jams that make summer fruit taste extra special in the middle of January.

Berry, Berry Good

Strawberry might rise to the number one spot on everyone’s favorite fruit list, but don’t neglect blueberries, blackberries and, if you’re lucky enough to find a source for them, tayberries. These juicy gems have plenty of natural pectin, which aids in the thickening, especially the latter three. Pro tip: If the recipe calls for cooking, keep a close eye — and ears — on your batch. It’ll go from a rapid bubbling boil to a slower rolling boil when it’s ready to be pulled off the heat. Don’t freak if it’s on the thinner side. It thickens up as it cools.

Stone Fruit Time

These arrive a little later in the season, and the anticipation makes the enjoyment even greater. The debate over whether to peel or not goes both ways: Blanch and peel peaches and plums while apricots really don’t need to be peeled, the thin skin adding extra thickening power.

Opening those little white boxes around the dinner table or in front of a favorite TV show is a special treat we all love. But, takeout food comes with a cost: It’s both expensive and often made with a lot of extra sugar, salt, and fat. Instead, learn to make classic Chinese takeout favorites at home for quick and easy weeknight meals with healthier ingredients. You might discover a new favorite or improve upon an old one. You’ll have a ton of fun in the process, and a dinner the whole family will love.

Appetizers

Pot Stickers (Chinese Dumplings)

Potstickers are traditionally made with pork, but these dumplings feature ground shrimp and beef. The recipe makes a lot of filling, so make extra dumplings (and don’t forget to buy extra gyoza wrappers) for future meals or unexpected guests. To store extras, place the prepared potstickers on a parchment-lined baking sheet and freeze, then transfer them to a zip-top plastic bag, label, and date. You can fry them from frozen (and add a little extra cooking time) or defrost them for a few minutes on the countertop. Serve these dumplings with soy sauce or whip up an Easy Asian Dipping Sauce.

Soup

Egg Drop Soup (Better than Restaurant Quality!)

Easy Chinese Dinners Better Than Takeout | Egg Drop Soup (Better Than Restaurant Quality)

This warming and comforting soup is super easy to make by whipping eggs into hot chicken broth, and then topping it with chives or green onions. If you like your soup a bit thicker, add a touch more cornstarch. If you’re looking to cut down on salt, use a low-sodium chicken broth or bullion cube, since the soy sauce will have plenty of flavor. Toss in a handful of frozen corn for more texture, and leave out the food coloring if you don’t have any on hand.

One more bowl, please!

Chicken

General Tsao’s Chicken II

The trick to this spicy-sweet chicken dish is to fry the chicken twice. However, if you’re short on time or oil, you can simply stir-fry the chicken (thighs or breast chunks work great) in your pan, remove them and make the sauce, then stir everything back together. If you don’t have peanuts on hand, cashews are an excellent substitute. Dial up or down the heat to your taste by adding or removing chilies. This dish pairs perfectly with steamed rice and broccoli.

Pork & Beef

Sesame Beef

So quick and easy, this beef dish can be prepped and marinated several hours or overnight, then it’s only a matter of quickly cooking it on the stove top to get dinner on the table. Double the marinade, soak the meat on one half and reserve the other half for serving as a sauce over rice or noodles when serving the beef.

This is a Hong Kong style recipe that is popular at dim sum restaurants. It can be served as a main dish on its own, or as an appetizer. If you’re avoiding gluten in your diet, substitute cornstarch for the wheat flour. In fact, many of our reviewers preferred making the recipe this way.

It doesn’t get easier than this: Spaghetti noodles are tossed in pantry staples (soy sauce, teriyaki sauce, and honey) along with crisp vegetables, for the perfect side dish. Want to make it a main course? Cook a bit of your favorite meat or fish in the pan first, then set it aside while you prepare the rest of the recipe. This is a great way to use up any leftover cooked chicken or vegetables in the fridge.

Every May, a bevy of biscuit lovers band together for the International Biscuit Festival held in Knoxville, Tennessee. We asked the winning competitors in 2017’s biscuit baking competition, and some biscuit experts who attended the festival, for some tips that will help raise your biscuit game. Here’s what they shared with us:

Best Buttermilk Biscuits

1. Handle with Care

Kim Asbury, 2017 Special Category winner and winner of the overall best biscuit: “I use plastic gloves so that I don’t warm the biscuit dough with the natural body heat from my hands. I also smash the cold butter into the palms of my hand, and then I flake it off with my fingers into the biscuit dough. It’s a nice way to incorporate the butter.”

2. Try Alternatives to Butter

Heidi Billoto, a Charlotte, N.C.-based culinary expert: “You can freeze olive oil and use it as a substitute for butter in any biscuit recipe. Another tip is to grate the cold butter into your dough.”

3. Preheat That Skillet

Chadwick Boyd, Food and lifestyle expert: “If you’re baking your biscuits in cast iron cookware, pre-heat the cookware before layering in your biscuit dough. It will create more steam while baking, and that results in a crispier biscuit.”

4. The Big Chill + Love

Evie Braude, the 11-year-old winner of the 2017 Student Category: “I use lots of love, and lots of cold butter.”

5. Yes, Add Yogurt

Alexis Durand, the 2017 Sweet Category winner: “I use a combination of milk and yogurt for the liquid ingredient in my biscuits. It helps create a crispy crust.”

6. Fold the Dough

Connor Mathis, the 2017 Savory Category winner: “You can create layers in your biscuits by folding the dough before you use your biscuit cutter.”

7. Go Ahead and Crowd the Pan

Carrie Morey, owner of Callie’s Hot Little Biscuits, Charleston, S.C.: “Make sure that your biscuits touch other biscuits on all sides as they bake. This will help them rise more evenly. If you have extra space in your baking pan after you’ve put in your biscuits, shape some extra biscuit dough into a “snake” that is long enough to create a border that touches each biscuit.

8. Butter + Buttermilk Adds Great Flavor

Matt Sandbank, the 2016 biscuit baking competition winner: “Leavening agents can give biscuits an odd, chemical taste. I combine butter and buttermilk to mask that taste.”

9. Praise the Lard

Adina Steinman, Epicurious.com: “I use a combination of butter and lard for the fat when I make biscuits. The butter gives great flavor, and the lard makes the biscuits fluffier and flakier.”

Article author Adrian Miller is a James Beard Award-winning food writer, who happens to love biscuits. He was a “Special Category” judge at the 2017 International Biscuit Festival.

Awesome recipe.”

Top Tips for Poke Cakes

  • Cool the cake slightly before poking holes in the cake and pouring the liquid layer over it, but be sure to poke holes while the cake is still warm.
  • If the liquid is thick, you can poke larger holes with skewers, chopsticks, or the handle of a wooden spoon.
  • Most poke cakes are even better if you let them chill in the fridge overnight before serving.
