It’s no secret I’m totally obsessed with the spicy stuff from Eliot’s Adult Nut Butters from Portland, Ore., but my crush turned to love after making a batch of peanut butter cookies using the Spicy Thai Peanut Butter.

Since discovering it a few months ago, I’ve been taking a minimalist approach, eating the assertively seasoned, savory peanut butter smeared on apple slices. Then, a friend suggested making cookies with it. Sure, why not?

My husband is a regular cookie monster, and peanut butter is his favorite, so I searched and found the Best Peanut Butter Cookies Ever. These were about the easiest cookies I’ve ever baked, with just six ingredients. Big bonus points for the gotcha factor. After taking the first bite, I asked the Mister if he could taste anything shockingly different about these cookies. Well, besides the wonderful heat that comes on slowly and never burns.

He didn’t guess that there wasn’t a bit of flour in the dough. Just peanut butter, sugar (I used 1.5 cups instead of 2 because the peanut butter contains sugar), a couple of eggs, a pinch of salt, baking soda and vanilla. That’s it. No flour. Which means your gluten-free-eating friends and family are going to LOVE these.

The Spicy Thai Peanut Butter succeeded in making the Best Peanut Butter Cookies even better, delivering complexity in the form of lemongrass, cayenne pepper and Kaffir lime leaves. Would those who fear fiery foods want to avoid trying this treatment? The level of spice hits about two stars, but it’s a sweet ride, not a jolt.

Possible pairings: Dunking in a icy cold glass of milk is cool, but the heat in this cookie would also partner up with a lager.
