About that zucchini you planted in the garden earlier this year, it’s kinda taking over, isn’t it? By August, the fear of being squished under a mountain of summer squash seems all too real. No way to zoodle yourself out of this one; you need a Plan B.

Luckily, there’s a holiday that solves this problem. It occurs every summer on August 8: “Sneak Some Zucchini Onto Your Neighbor’s Porch Day” — a holiday that needs little further explanation, though it’s worth noting that porches are not technically required. Any doorstep will do. Go ahead — rid yourself of excess bushels of zucchini. Because sharing is caring.

We all want to cook healthy homemade meals during busy weeknights, but finding the time is a major challenge.

Here’s a simple strategy that will give you back hours during the busy work week: Prep all your ingredients for the week at one time. You’ll be amazed how much time you save — and weekday dinners will come together 1-2-3.

Here are time-saving tips — and four weeks’ worth of recipes — to get you through the busy weekdays with your sanity fully intact (and your family fully fed!).

Pre-Prep Quick Tips

1) On Sunday, do your grocery shopping for the entire week — a big time saver in its own right!

2) Once you have the goods, check out the recipes’ ingredient lists to determine how much and what kind of prep you’ll need for each ingredient throughout the week. (We’ve made it simple in our menu plans below.)

3) Sunday afternoon, set aside some time for washing and prepping ingredients. Note: Don’t pre-prep fresh herbs, potatoes, and other ingredients that are delicate or might discolor if pre-prepped.

4) Put the pre-prepped ingredients into containers or baggies for each recipe, label them, and pop ’em in the fridge.

A few years ago, the foodie world went mad for macarons. People were spending a small fortune on these pretty French cookies, while others attempted to recreate them in their own kitchens. I, personally still have flashbacks from times I tried to make them; there are so many things to consider. Should you use aged egg whites or plain old regular egg whites? Leave the oven door ajar or leave it closed? It was a nightmare.

Then along came the cronut. Ah, yes, these croissant/doughnut hybrids are certainly tasty. Once again people were lining up outside on pavements desperate to buy this new wonder pastry. Some brave bakers even tried making them at home. I warn you, homemade cronuts are not for fainthearted. Frying up these large buttery pastries in a small kitchen is pretty terri-frying!

Now the foodie world is buzzing about the French éclair, and for once I am genuinely excited. The French éclair is, for me, simply perfection. It’s got it all: delicate pastry, creamy and light crème pâtissière, and a thin film of glossy chocolate. They are also simple to make, which makes me happy.

Choux pastry might sound scary, but it’s actually one of the easiest pastries to make. Then the filling can be as simple as whipped cream or the more traditional (and a little more difficult) crème pâtissière.

What is different about this new French eclair is purely aesthetics. The reinvented éclair — currently trending in big cities all over the world — is a little more high-class and fashion focused. These pretty pastries are dressed up with gold leaf, candied rose petals, pralines, and mini meringues. They are works of art.  Stores like Maitre Choux in London, L’Éclair de Génie in Paris and Japan are more like art galleries than pastry stores. These modern éclairs are not only beautiful, but some carry messages too: Éclair Gay Pride, Éclair 4th of July – they celebrate life!

Recently, I took a trip to Choukette in Seattle to sample these new arty eclairs for myself. The minute you walk in the door, you feel like you are somewhere special. The éclairs are all laid out like jewels, all glossy and shiny beneath a glass counter.

I wanted them all – lemon curd with meringue drops, praline with chocolate and hazelnut cremeux, strawberry and lime with fromage blanc.  After much deliberation, I carefully chose two, and both were wrapped up in a fancy box and bag, like an expensive pair of shoes.

These éclairs aren’t cheap, but then again, it’s all about the experience.  It’s the perfect treat to spoil yourself, or a great gift for a friend. Personally, I can’t resist them, and I will be indulging with these posh éclairs when I can. Meanwhile, I will also be experimenting at home with some simple éclair recipes, and might even attempt some adventurous fillings too.

It’s easy to convert your favorite Halloween drink — like a Mexican Vampire or a Salem Witch — by dissolving 1 teaspoon of plain gelatin in warm water and stir. Add it to a mixed drink and pour into shot glasses and chill. BOOm!

In the frantic rush to get the kids off to school with a healthy lunch in hand, we go for convenience.

We stuff sandwiches and other goodies into plastic baggies or wrap them up in aluminum foil and wax paper; we toss individual packages of chips, yogurts, puddings, and juices into bags — packaging that gets a single use and then lands in the garbage…and eventually the landfill.

The cost of convenience is high, however. In fact, according to Waste Free Lunches, an average school-aged child’s lunch box generates an estimated 67 pounds of waste per school year. That’s 18,760 pounds of lunch waste for just one average-size elementary school. As a result, our landfills are overflowing and incinerators are burning up loads of plastic waste, polluting the air we breathe. Meanwhile, Ecowatch reports that “93 percent of Americans age 6 or older test positive BPA (a plastic chemical).”

Here are some ideas for how to turn a typical disposable school lunch into a waste-free, reusable lunch.

1) Instead of disposable plastic bags or aluminum foil, store these foods in reusable containers:

  • Sandwiches and wraps
  • Sliced cheese and cut fresh fruit and veggies
  • Crackers, pretzels, cookies, chips, and other snacks

You can purchase fun “bento box” style lunchbox inserts, like the one shown above, from Target or similar stores. Or stow sandwiches and snacks in reusable, washable sandwich bags, like these from lunchskins.

2) Instead of pre-packaged individual-serving containers, put these foods in reusable jar containers:

  • Soups, stews, and chilis can go into Thermos-style insulated jars
  • Yogurts, applesauces, and pudding go well with sturdy, screw-top jar containers to prevent leaking

3) Instead of sending juice, milk, or other drinks in individual cartons or pouches, fill a reusable, washable drinking cup (one with a good seal!).

4) Instead of packing plastic forks and spoons and paper napkins, include cloth napkins and reusable silverware in lunch boxes.

Sure, there’s bound to be a learning curve as kids get used to toting empties back home for washing, but once you establish your waste-free routine, you’ll both feel good about your eco-smart lunch box.
