On a recent trip to the beautiful “Bavarian Village” of Leavenworth, I rediscovered the deep pleasure that comes from dunking various bits of food into molten cheese. At Pavz Cafe, the fondue gets its rich, ripe character from full-flavored Swiss-style cheeses made by the restaurant’s owner. A splash of Gewurztraminer wine adds a hint of sweet, which brings out the best in the juicy apple slices served alongside. The fondue was accompanied by some surprising dippers, which inspired me to blow up the notion that traditional crusty French bread’s best for cheese fondue. Here’s a short list of some good candidates to be bathed in glorious, gooey cheese.
